One research institute in Kanagawa prefecture is now carrying out a collaboration research on how to utilize them as a functional food ingredient. Let us see the components of mulberry leaves. As for mineral components, mulberry leaves contain calcium about 6 times more, iron 2 times more than tea leaves. In comparison with vegetables, calcium content is about 63 times more than that of cabbage, iron about 2 times more than turnip. Also, they are rich in plant fiber, for example, whose insoluble fiber is 45% and soluble 7%. This ratio is almost the same as burdock (51%) and osmund (54%). There is a report that about 230mg of gamma-amino butyric acid which is said to lower the blood pressure is contained in 100g of dried mulberry leaves. This is approximately the same amount in gabaron-tea which is recently paid much attention to as healthy beverage, since it contains much gamma-amino butyric acid. Phytosterol is confirmed to be very effective to improve high-cholesterol in blood as this suppresses the absorption of cholesterol in intestines. About 46mg of sitosterol, one variety of phytosterol, is contained in 100g of mulberry leaves which is equivalent to 3.3 times of the amount in green tea.
